Believe me. I know that ice cream is one of humankind’s greatest creations.

But here’s the deal. sometimes you want something that’s above and beyond the fatty, store-bought norm. Sometimes you want something that will impress your friends with its sheer ingenuity and delicious flavor. And most especially, sometimes you want something’s that super easy, fast, and will keep you looking fabulous.

 

So when I was at the store this week and saw that Dole bananas were on sale, I bought an armful of ‘em. How does this relate to ice cream you may ask? Think Chunky Monkey, minus the carton. 

I recently stumbled across the most amazing, one-ingredient ice cream recipe on TheKitchn. Here’s their brilliant creation, in my words:

Go Bananas Ice Cream
Adapted from TheKitchn
Makes 2 servings

Ingredients:

  • 3 bananas (ripe, but not bruised)

Directions:

  1. Peel and slice bananas into 1/2-inch rounds and place uncovered on a baking sheet. Freeze for at least 2 hours (okay if longer). Put them in a food processor and blend until you have smooth ice cream consistency, stopping once in a while to stir the bananas back down.
  2. Optional: Get creative with add-ins: I love throwing in 1-2 Tb. of peanut butter or chocolate. Or try 1/2 tsp. of vanilla, cinnamon, and a handful of walnuts.
