Grilled Party Appetizer for Outdoor Entertaining!

Outdoor Entertaining season is here and it's time to get out of the kitchen!  Here is a very simple but special appetizer idea for your Spring and Summer BBQ's. GRILLED SUMMER BRUSCHETTA: This iight version of bruschetta features the flavors of fresh produce. We went light with the olive oil because there’s nothing better than fresh produce and we wanted it to shine right through. This flavorful appetizer is both affordable and easy to prepare, making it a “must-serve” all summer long.

Ingredients (serves 10-12)

  • 1 loaf Italian bread (sliced into ½” slices)
  • 1 clove garlic (cut in half lengthwise)
  • 4 plum tomatoes (rinsed, sliced thinly and chopped)
  • ¼ cup finely chopped sweet onion
  • olive oil
  • coarse sea salt, to taste
  • fresh cracked pepper, to taste
  • fresh basil (ribbon-cut/thinly sliced), to taste

Instructions

Preheat grill. Spray or brush both sides of each slice of bread with olive oil, then rub each side with cut side of garlic. Combine tomatoes, onion, olive oil, salt and pepper in a bowl. Set aside. Grill bread on medium heat for 3-4 minutes per side. Mix in basil to tomato mixture. Top each slice with a generous tablespoon of tomato mixture. Serve.

 

GRILLING/OUTDOOR ENTERTAINING TIPS - A great summer party starts with a great grill.

 
  1. Start with a great grill.  When selecting a grill make sure think about added features like steamer and burners.  Kmart Outdoor Living carries a wide variety of affordable grills from names you can trust like Kenmore, Char-Broil and Weber.  (see our tips for how to set up your party space here>)
  2. Make sure your grill is working properly in advance of your party. Don’t forget to check the level of your propane tank.
  3. Before preheating your grill, brush off any residue on the cooking grates and grease them sufficiently so your food won’t stick.
  4. Have a plan for keeping any young guests away from the grilling area.

Yummy!  Can't wait till BBQ season finally arrives.  I never would have thought of grilled bruschetta. Thanks for sharing this.
