Meatless dishes are a good way to start. I have never been a big meat eater even growing. I stopped eating pork first- when I was 17, then I stopped eating beef when I was around 25-eating only white meat. Now that I am in my mid 30's I have stopped eating meat period. It was a gradual process. Temptation was there of course but it gets easier with prayer and time. Now, I can cook meat for my children or other and it doesn't bother me. My children still eat meat but I do not cook it everyday for every meal. I will give them meat 2 or 3 times a week. Alternating breakfast, lunch, dinner. It works for us.
