Red w/ Beef, white w/ fish or pork -- how do YOU determine what you're pairing wine with?

I find that I am more apt to drink what I am in the mood for more than let food determine what I'm drinking. While I feel strongly about food and wine together, I will definitely mix it up a lot and have white with pizza, red with fish, etc.

How you decide what to drink with which foods??

I basically drink the wine that I enjoy - Chardonnay - with whatever meal I am having. However, when I have steak I do enjoy a good bottle of Cabernet. But I might have a glad of chardonnay before the meal. I know sometimes it is not good to mix wines - oh well!

I am a wine enthusiast so I like to mix it up and not pair wine/foods up with what the "wine experts" say.

I think you should drink what you like. However, there are some wines that bring out the flavor in foods. There's nothing more wonderful than a perfectly matched pairing that brings out the best in both food and wine.
Melanie -- I agree with you completely! sometimes I want a red w/ fish, or a white w/ a heartier meal. For me it's flavors that I want to complement. For example, instead of gewurztraminer with spicy foods, I may drink a sweet light red. Also, textures are important. With textures, the "norm" is more correct, such as a sauvignon blanc w/ fish - the acids in the sauv. blanc will be great with white fish.
