"Roughly one out of every 133 Americans has celiac disease, but 97% remain undiagnosed. This means that almost three million Americans have celiac disease and only about 100,000 know they have it."

What is Celiac Disease?
"Celiac disease is an autoimmune digestive disease that damages the villi of the small intestine and interferes with absorption of nutrients from food. What does this mean?
Celiac disease is triggered by consumption of the protein called gluten, which is found in wheat, barley and rye."

I've been gluten free for about 8 months now.  I gave blood today, so had my hemoglobin level checked. It was up to 16.0 compared to less than 12.5 when I started. It seemed amazing to me, so just had to share the "news" with folks who would have an apprecation for it.

Thanks for the suggstions on rolls.  I'll check them out.  I had a suggestion of Kutz rolls from a friend in the other group, so looks like there are several options available.  It's great to have other "Moms" to go for ideas. Kathi

Kathi - gf rolls - Whole Foods Gluten-Free Bakehouse biscuits, Gillians foods (they make the rolls served at Legal Sea Foods), Chebe, and there is a new Brazilian brand at Whole Foods that is frozen and about $8, but can't remember name.

Hi Ladies, I posted this request on another group also, so sorry if it is a second time for it, but I'm looking for help.  I'm planning Easter dinner and wonuld like to include dinner rolls.  I enjoy "Udi's" and "Rudi's" brands of bread, but I haven't found any similar rolls.  Do you have any you like, or am I better to bake them myself?  Thanks, Kathi

 Thanks for the tip.  I am finding much more frequently that when I ask restaurants do provide gluten free menus. "Fast food" places are more difficult, but options are increasing.

Kathi, try seaching for gluten-free restaurants on the Gluten-Free Travel Site. Glad you found the deli.

I'm in San Antonio for a couple of days and was happy to find a deli that has gluten free bread,  Little surpises like that make for a good day :-)  Kathi

Hi, I look forward to visiting and leaning more from all of you. I was diagnosed with celiac disease several years ago, but the only symptom until about two years ago was low blood iron. After I lost 20 to 25 lbs and had even lower iron levels I went gluten free. A few challenges, but I'm finding most stores now carry gluten-free produst and many restaurants have menus available. Iron is now up. Only negative is I've also gained a bit more weight than planned and a dress size too. But feeling good and doing well, so all is good :-)
