So recently my 8 year old son was diagnosed with a wheat and dairy allergy. A year ago that might have thrown me into a tail spin, however I am one course away from completing my certification as a Nutrition Educator and now am very well equipped with information and resources to tackle such a problem.
In my research and as a result of many moms contacting me through my website
iLunchBox, I have discovered just what an "epidemic" wheat and dairy allergies, intolerance (yes, there is a difference) and autoimmune diseases there are effecting our children. I don't remember it being such a problem when I was a child, do you?
The good news, if you can look at a bright side here, is that more and more parents are self educated on the problem and many food companies and grocery stores are accommodating us with more gluten free/dairy free items to choose from.
The hardest meal is lunch, and that is my business. In an effort to share some of my gluten free/dairy free lunch ideas I will try to post one a week here on Manic Mommies. Please share your ideas as well and we will have quite a repertoire of meals come next school year. Talk to you all soon.

Breakfast for Lunch Wraps:
1 brown rice tortilla, soften by warming or steaming
1 -2 hard boiled egg(s), sliced
2 piece of cooked bacon, I like to use the nitrate free
1/2 cup baby spinach
1 tsp mayonnaise
salt and black pepper
